Berries With Pancakes
I found this recipe a while ago on the web. I think it
was on the BBC web site, not sure. Anyway, i've been
a pancake fan since I was young. My parents used to
make them once a week for dinner. I always looked
out to that day! There are so many possible things
you can put on your pancakes, you'll never get enough
of them. Besides the popular toppings there are
some "exotic combinations" that are very tasty.
Pancakes with berries are delicious, so here is the
recipe for the best way to prepare them:

SHORT RECIPE
The ingredients


For the pancakes
55g/2oz plain flour
pinch of salt
1 egg yolk
150ml/5fl oz milk
3-4 tbsp vegetable oil
For the filling
½ lemon, juice only
1 tbsp brown sugar
30g/1oz butter
miniature bottle crème de cassis
punnet blackberries

First put the flour and salt in a bowl and add the egg yolk.
Start with a little bit of milk and increase slowly. Heat
a frying pan and add a bit of oil. Now add 2 table spoons
of the batter and make a pancake. The end result should
look a bit golden. Continue with these steps until all the
batter is used. Next are the filling ingredients. Put them in
a pan and heat. Saute for up to 3 minutes until the sugar
is dissolved and the berries are tender. Next step is to
fill the pancakes with the berries, and dust them with
icing sugar. The pancakes should be served right away.
