information you need to make them as delicious as
possible. Yeah, you'll need tacos. Oh and some butter
and Cheddar cheese. Cheese Tacos can be very good
snacks - so stock up on some of the ingredients so
you can enjoy them whenever you feel like it.

SHORT RECIPE
The ingredients

1 tablespoon olive oil
2 poblano chiles, cut into 1/4-inch strips
2 red bell peppers, cut int 1/4-inch strips
1 1/2 cups sliced mushrooms
1 clove garlic, minced
2 russet potatoes, peeled, cooked, cut into 1/2-inch cubes

1 cup packed grated cheese
1/2 cup chopped cilantro

8 warm corn tortillas

When serving you can use these "extras": Salsa,
sour cream, and sliced Avocado.

Use a large non-stick skillet to heat the oil. Now add the
mushrooms, peppers and saute until they are tender,
which should take about 10 minutes. Then add the potatoes and garlic and wait till the potatoes are warmed
up and look a bit golden, should take no more than 4 to
6 minutes. Now add salt and pepper (not too much).
Now sprinkle the cheese over and shake the pan just
slightly until the cheese is melted and it's covering the
vegetables evenly. Sprinkle with some cilantro. Get
the tortillas and put the above mentioned ingredients in
it. Enjoy your cheese taco.
