Chocolate Fudge
Millions of people are addicted to chocolate products.
Not surprising as chocolate is just darn delicious. Let's
see what it takes to make your own chocolate fudge,
it not as hard as you think it is. Before you know it
you can make your own and serve them to your
friends and family.

The ingredients
2 x 3/4 cups sugar
4 ounces of unsweetened chocolate
3 tablespoons of butter, plus a bit more for greasing pan
1 cup half-and-half
1 tablespoon corn syrup
1 tablespoon vanilla extract

Optional ingredient(s):
1 cup chopped, roasted nuts.

When serving you can use these "extras": Salsa,
sour cream, and sliced Avocado.

Start by greasing a 8 by 8 inch pan with butter. In a heavy
bottomed saucepan combine the sugar, the chocolate, 1,5
tablespoons of the butter, half-and-half, and the corn syrup. Over medium heat, stir the mix with a wooden spoon until the sugar is dissolved nicely and chocolate is melted. Now increase heat and wait till it boils.

Next, reduce the heat to medium-low, cover, and boil for
about 3 minutes. Remove the cover and attach a thermometer to the pot. Cook until it says 234 degrees F,
or 112 Celsius.

Remove the pot from the heat and add the remaining
butter. Don't stir. Let the mixture cool for approximately
10 minutes, or until it falls to 130 F, or 54 C.

If you want you can now add the vanilla and nuts, and mix
until it's well blended and the texture becomes matte. Now
pour the mixture into the prepared pan. Transport it to
a cool dry area until it gets firm. Cut into 1 inch pieces and
store them in an airtight container for up to 7 days.
