Greek Lemon Soup
After seeing "My Big Fat Greek Wedding" some time ago
on television, and the huge amounts of tasty Greek food - I started looking for Greek recipes. Thankfully the
Internet is full of Greek recipes so it wasn't hard to
find this Greek Lemon Soup. I made this for my
entire family and they were impressed with the unique
taste. So it's definitely something i'd recommend.
The ingredients
- 21 oz Condensed chicken rice soup (2 cans at
10.5 oz each).
- 2 Soup cans water 1 Egg.
- Well beaten 2 medium Lemons.
You should be able to get 5 to 6 servings out of this.
Get a medium-sized heat resistant non metallic bowl and
throw in the chicken rice soup and water. Heat those, in
a microwave - make sure it's covered. 6 to 8 minutes should be sufficient. The soup must be very hot. Now
slowly add some of the soup mixture to the well beaten egg, stir until the ingredients are mixed completely. Next,
return the egg-soup mix to the soup and again stir to
combine. Heat uncovered in a microwave oven for about
2 minutes or until the soup thickens slightly. In the meantime slice one of the 2 lemons into thing circles.
Squeeze the juice from the second lemon. Before you serve
the Greek Lemon Soup add the lemon slices and juice to it.
Heat again (uncovered) for another 2 minutes. Enjoy the
unique taste of this recipe.
