Marinated Mushrooms
Mushrooms are a well known food in the US and Europe.
It contains high levels of vitamin B, are fat, cholesterol and
sodium free. The most common mushroom eaten today
originated in France. Mushroom hunting is a popular hobby,
however, only people who know which mushrooms are
consumable for humans should participate.

The ingredients

1 cup white wine 2 tbs. brown sugar
1/4 cup sliced green onion
1 teaspoon hot red pepper flakes
1/2 teaspoon salt
1/2 teaspoon Oregano leaves
1/2 cup white wine vinegar 2 cloves garlic, finely minced 1/4 cup diced red pepper 1 lb small fresh
mushrooms, trimmed.
1/4 teaspoon. ground black pepper.

Let's get going..

All right, combine the wine, sugar, vinegar, garlic, red pepper flakes, and green onion in an 8 cup microwave-friendly casserole. Cover the casserole, set the microwave
for about 4 minutes at "HIGH". If the mixture looks simmering you can take it out. Add mushrooms to the mixture. Cover again, microwave for another 7 minutes.
The mushrooms should look tender though not mushy.
Stir after a few minutes. Then stir in salt, pepper, and oregano. Let it stand, covered for about 30 minutes.
Transfer the mixture to covered jar or container. You
can leave the mixture refrigerated for up to 1 week.
